Vesterhav is inspired by the windswept coastline of the North Sea, just a few kilometers from the distillery — with thoughts drawn to the salty sea, the westerly winds, the smokehouses along the shore, and the heathlands surrounding us.
In the whisky, maritime and lightly saline notes from peat smoke merge with bright fruit, vanilla, and warm spices from the bourbon casks in which the whisky has matured for 4–8 years.
The whisky is composed from a combination of unpeated and peated casks, complemented by a small proportion of beechwood-smoked malt, as well as our heritage Danish barley variety Imperial. This adds richness, citrus, and fruit while supporting the smoky profile. The combination of multiple vintages brings both freshness and depth.
In Vesterhav, we have brought these elements together in a dram that appears classic and familiar in its expression — yet unmistakably Thy.
Vesterhav also marks something special for us: it is the first time we use peat in a larger release, and it remains a rarity to find a purely bourbon cask matured Danish whisky — also here from Thy.
